These very soft, light, and aromatic basil cookies are a perfect accompaniment to your tea. This quick and easy recipe yields delicious cookies with refreshing notes of basil and lemon, and they take only 20 minutes to prepare.

Ingredients:

- All-purpose flour – 250 g (2 cups)
- Butter – 150 g (10 ½ Tbsp (1 stick + 2 ½ Tbsp) or 5.3 oz )
- Sugar – 80 g (for moderately sweet cookies; increase to 130 g if you prefer very sweet) (⅓ cup or ⅔ cup)
- Egg – 1
- Fresh basil leaves – 30–40 g (1 to 1 ½ cups)
- Lemon zest – from 1 medium lemon
- Baking powder – ½ tsp
- Vanilla extract – a pinch
- Salt – a pinch
Cooking process
First, preheat the oven to 190°C (375°F).
1.Beat the softened butter with sugar using a mixer. Add the egg, lemon zest, and finely chopped basil leaves (either chopped by hand or blended for a greenish hue) to the mixture. Continue mixing until the batter is smooth and homogeneous.
In a separate bowl, sift the flour and mix it with the baking powder and a pinch of salt. Gradually add this dry mixture to the wet ingredients and knead until a smooth dough forms.
2. Divide the dough into portions and roll each portion into a ball. Place the balls on a baking sheet lined with parchment paper, then gently press each ball to form evenly shaped, round cookies.

Place the baking sheet in the preheated oven and bake the cookies for 12–15 minutes, until lightly golden.

To keep the basil cookies soft for longer, store them in an airtight container.
