Basil cookies

Very soft, light and aromatic basil cookies will be a great addition to your tea drinking. This is a quick and easy recipe for delicious cookies with interesting fresh notes of basil and lemon. Its cooking time is only 20 minutes.

Ingredients:

  • All purpose flour – 250 gr.
  • Butter – 150 gr.
  • Sugar – 80 gr. (For moderately sweet cookies. If you like very sweet, then you can add 130 gr.)
  • Eggs – 1 pc.
  • Fresh basil leaves – 30-40 gr.
  • Zest from one lemon
  • Baking powder – 0.5 tsp
  • Vanilla extract – pinch
  • Salt – a pinch

Cooking process

1 First of all, turn on the oven and heat it up to 190 C (375 F) degrees.

2 Beat softened butter with sugar using a mixer. Add an egg, zest of one lemon, and finely chopped basil leaves to the mixture (you can simply chop them with a knife or use a blender, which will give the cookies a greenish color). Continue mixing with the mixer until you achieve a homogeneous consistency.

In a separate bowl, sift the flour. To the flour, add baking powder, a pinch of salt, and mix everything well. Add this mixture to the remaining ingredients and knead the dough.

3. Divide the dough into portions and roll each portion into balls. Place the balls on a baking sheet lined with parchment paper. Gently press down on each ball to create evenly shaped round cookies.

Place the baking sheet in a preheated oven. Bake the cookies for 12-15 minutes.

For basil cookies to stay soft for longer, they must be stored in a tightly closed container.
