This light, refreshing, and quick salad with chickpeas, fresh vegetables, and feta cheese is just the thing. Despite its lightness, it’s quite satisfying. Fresh vegetables and herbs provide crispness and brightness, while chickpeas and feta add protein and satiety.

Ingredients (for 2 servings):
- Cucumbers – 2 medium (about 1 cup sliced)
- Canned chickpeas – 4 tablespoons (about 1/4 cup)
- Lettuce or Iceberg lettuce – 2 cups, torn into pieces
- Feta cheese – 70–80 g (about 3 oz or 1/2 cup cubed)
- Red onion – 1/4 medium
- Lemon juice – 2–3 teaspoons
- Olive oil – 2 tablespoons
- Dried oregano – pinch
- Ground black pepper – to taste
Instructions:
Marinate the onion: Slice the red onion into thin half rings. Pour lemon juice or a splash of wine vinegar over the onion and let it sit for 5 minutes. This softens the onion’s sharpness and removes any unpleasant bitterness.
Prepare the vegetables and cheese: Wash the lettuce and cucumbers thoroughly. Slice cucumbers into medium-sized pieces. Tear the lettuce into bite-sized pieces with your hands. Cut the feta cheese into small cubes.
Make the dressing: In a small bowl, whisk together olive oil, lemon juice, and oregano.
Assemble the salad: On a serving plate or bowl, layer the lettuce, cucumbers, chickpeas, marinated onions, and feta cheese. Feta is salty enough, so additional salt is optional. Drizzle the dressing on top and toss gently. Finish with freshly ground black pepper if desired.
