This Asian slaw is astonishing. The main highlight of this salad, in my opinion, is the dressing. The delicate, creamy dressing based on peanut paste pairs perfectly with fresh crispy vegetables.
Ingredients:
- Carrot
- Cucumber
- Cabbage
- Green onion
- Peanuts – a handful
- Sesame seeds – a handful
- 4 tablespoons Peanut paste
- 3 tablespoons Soy sauce
- Lemon juice – from half a lemon
- 1 teaspoon Honey
Instructions
Carrot: Wash, peel, and cut into thin sticks or create thin threads using a vegetable peeler.
Cabbage: Finely shred the cabbage.
Cucumber: Wash, peel, and cut into thin sticks.
Green onion: Slice according to your preference.
Finely chop the peanuts.
Prepare the dressing for the salad. Mix peanut paste with soy sauce, honey, and lemon juice. Adjust the thickness of the dressing by adding the desired amount of water. In the end, you should achieve a smooth and creamy consistency that’s neither too liquid nor too thick. You can also adjust the amounts of each ingredient in the dressing according to your taste.
Pour the vegetables with the prepared sauce. Gently mix. Sprinkle sesame seeds (lightly toasted in a dry pan beforehand) and pieces of peanuts on top of the salad.
This Asian slaw is best enjoyed freshly prepared. However, if you intend to serve it later, it’s preferable to dress it just before eating. This way, the salad will retain its crispy qualities.
