The baked pancake (better known as Dutch baby) is cooked in the oven in a cast iron skillet. It is quite simple to prepare. This baked pancake goes well with different fillings. Ingredients:
For a pancake
- Wheat flour – 0.5 cup
- Milk – 0.5 cups
- Eggs – 3 pcs. (medium size)
- Pesto sauce – a few tbsp.
- Butter – 1-1.5tbsp.
- Salt – a pinch
Filling
- Suluguni cheese (or any other)
- Mozzarella cheese
- Dry-cured ham (or other)
- Arugula
Cooking process
First of all, we take out the eggs and milk from the refrigerator – they should be at room temperature. Next, heat the oven to 220 C degrees (425 F).
1 Prepare the pancake dough. Break eggs into a bowl. Add warm milk to them and mix with a whisk. Salt. Gradually add the sifted flour. Mix everything until you get a homogeneous consistency.
2 Put the butter in a cast iron skillet. Place the skillet in the preheated oven for 1-2 minutes. During this time, the pan should heat up and the butter should melt.
Put a few tablespoons of pesto and spread them over the dough.
Put the pan in the oven for about 15 minutes. During this time, the edges of the pancake will rise and brown a lot.
4 Remove the pancake from the oven and put the cheese on it. Place in the oven for 1-2 more minutes to melt the cheese.
5 Sprinkle the finished baked pancake with dry-cured ham and arugula.
