These Super Cheese Hot Sandwiches are the ultimate comfort food — crispy on the outside, soft on the inside, and filled with perfectly melted cheese. They’re quick to make, customizable, and ideal for breakfast, brunch, or a cozy snack.

Ingredients (Makes 2–3 servings):
- 4 slices sandwich bread (white, sourdough, or your favorite)
- 2 medium or 3 small eggs
- 3 tablespoons milk
- 1 ½ tablespoons (about 20 g) butter
- 4–6 ounces (115–170 g) cheese, sliced (cheddar, mozzarella, or your favorite melty cheese)
- Fresh dill, arugula, or other herbs — to taste
- Pinch of salt
- Pinch of ground black pepper
Instructions
1. Make the egg mixture:
In a shallow bowl, whisk together the eggs, milk, salt, and pepper until smooth and well combined.
2. Soak the bread:
Dip each slice of bread into the egg mixture, coating both sides evenly. Let the bread absorb the mixture for a few seconds so it’s nice and fluffy.
3. Fry the bread:
Melt the butter in a large nonstick skillet over medium heat. Add the soaked bread slices and cook for 3–4 minutes on each side, or until golden and slightly crisp.

4. Add the cheese:
Once both sides are golden, place 1–2 slices of cheese on top of each piece of bread. You can also sprinkle a little shredded cheese underneath the bread before flipping for an extra crispy, cheesy crust.

5. Melt and finish:
Reduce the heat to low, cover the skillet with a lid or foil, and let the cheese melt for about 2 minutes.

6. Serve:
Cut each sandwich diagonally into triangles. Sprinkle with chopped fresh herbs and add a few arugula leaves on top for freshness.

💡 Tips & Variations
- Add sliced tomato, ham, or cooked bacon between the bread slices for a heartier version.
- For extra flavor, try using garlic butter instead of plain butter.
- Serve with ketchup, aioli, or a small salad for a complete meal.
