I want to offer you to cook a wonderful summer appetizer – marinated tomatoes with mozzarella balls. It is very fragrant, light and tasty.
Ingredients:
- Tomatoes – 3-4 pcs.
- Onion – 1/4 onion
- Garlic – 1-2 cloves
- Mozzarella – 100 gr.
- Parsley – 1 tbsp. finely chopped
- Basil – 1 tbsp. finely chopped
- Olive oil – 85 ml.
- Balsamic vinegar – 2 tbsp.
- Honey – 1 tbsp.
- Ground black pepper – to taste
- Salt – to taste
Cooking process
Cut the tomatoes into slices of medium thickness (approx. 0.5 cm). Put them on a plate or in a container.
Mix olive oil, balsamic vinegar, honey, finely chopped herbs, garlic and onion in a jar. Salt and pepper to taste. Close the jar with a lid and shake vigorously. Pour the mixture over the tomatoes.
Cover with a lid and leave the tomatoes to marinate in the refrigerator overnight.
Take the marinated tomatoes out of the fridge. Let them stand at room temperature. Put the mozzarella on the tomatoes. Drizzle the rest of the marinade over the top.
Tomatoes are very fragrant and savory. And neutral mozzarella balances this piquancy well.
Another option for preparing this appetizer. Take cherry tomatoes and cut them into 2 parts. Put them in a jar with mozzarella balls. Pour everything with dressing, close the jar with a lid and shake. Put in the refrigerator overnight.
In this version, the appetizer is even more savory, since the mozzarella is also marinated.
