Onion soup is one of the most famous dishes in French cuisine. This is a tender soup with a sweet and creamy taste. It is prepared with a minimum of ingredients. And the taste and presentation of the French onion soup is beyond praise.
Ingredients:
- Onion – 1 kg.
- Butter – 50 gr.
- French baguette – 1 pc.
- Broth – 2 l.
- Gruyère (or Emmental) cheese
- Dry white wine (or semi-dry) – 100 ml.
- Flour – 1 tbsp.
- Thyme – 2 sprigs
- Bay leaf – 1 pc.
- Salt
Cooking process
1 Cut the peeled onion into half rings (not very thin).
Melt the butter in a heavy-bottomed saucepan (I cook in a cauldron). Add chopped onion.
Simmer the onion over low heat for 1.5-2 hours. As a result, the onion becomes very soft and acquires a golden caramel color.
Add wine to the saucepan. We give a few minutes for the alcohol to evaporate. Add flour, stir and cook for a minute. Next, pour the broth into the pan, bring to a boil and cook over medium heat for 20 minutes. 10 minutes before the end of cooking, add bay leaf and thyme (discard them after the end of cooking). Salt to taste.
The baguette needs to be toasted. Cut it into slices and bake in the oven. You can also dry the baguette in a pan or in a toaster.
3 Pour the soup into serving pots or other heat-resistant forms. Place toasted baguette and sprinkle with grated cheese. We put in a preheated oven to 200 C (395 F) degrees. Bake until golden brown – 10-12 minutes.
Onion soup can be served in a different way. Simply bake baguette pieces with cheese and serve separately with soup. Or sprinkle the soup with cheese and bake, and serve the crispy baguette separately.
