Ingredients (for 4 servings):

  • 1 French baguette (or ciabatta loaf)
  • 1 (14.5 oz) can diced tomatoes (in juice)
  • 7 oz (200 g) cremini or button mushrooms, sliced
  • 7 oz (200 g) mozzarella cheese, shredded
  • ¾ oz (20 g) Parmesan (or another aged cheese), grated
  • 3.5 oz (100 g) salami, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced or thinly sliced
  • 2 Tbsp olive oil
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, for serving

Instructions

1. Make the tomato sauce.
In a medium skillet, heat the olive oil over medium heat. Add the garlic and cook for 1–2 minutes, until fragrant but not browned.
Add the diced tomatoes, dried basil, oregano, salt, and pepper. Stir to combine, bring to a simmer, and cook for 5–7 minutes, until slightly thickened. (The sauce should not be too runny.)

2. Cook the mushrooms and onions.
In another skillet, heat a little olive oil. Add the chopped onion and cook until soft and translucent.
Add the sliced mushrooms and sauté until golden brown. Season with salt and pepper to taste, then remove from heat.

3. Prepare the toppings.
Slice the salami. Shred the mozzarella (if using fresh mozzarella balls, tear them into small pieces).

4. Assemble the French Bread Pizza.
Preheat your oven to 425°F (220°C).
Cut the baguette in half crosswise, then slice each half lengthwise — you’ll have 4 long pieces.
Place them cut-side up on a baking sheet lined with parchment paper.

Spread each piece with a generous layer of tomato sauce. Top with salami slices, sautéed mushrooms and onions, and finally with mozzarella cheese.

Bake for 10–12 minutes, until the cheese is melted and bubbly and the edges are lightly golden.

5. Finish and serve.
Remove from the oven, sprinkle with grated Parmesan and a pinch of oregano, and garnish with fresh basil leaves.

Serve hot — crispy, cheesy, and absolutely irresistible!
