Georgian-Style Beef with eggplant is a traditional dish that combines the juiciness of the meat with the rich flavor of vegetables, enhanced by aromatic Georgian spices. Ingredients:
- Beef – 700 g
- Eggplant – 1
- Bell pepper – 1 piece
- Onion – 2 pieces
- Carrot – 1 piece
- Tomatoes in their own juice – 2 cans
- Garlic – 3 cloves
- Walnuts – a handful
- Khmeli-suneli – 2 tsp
- Paprika – 1 tsp
- Cilantro – 1 bunch
- Vegetable oil
- Salt
Cooking process
1.Cut the eggplant into cubes, place them in a bowl, and salt them. Let sit for 15-20 minutes to remove excess bitterness.
2.Cut the beef into strips and fry in vegetable oil for 10-15 minutes.
3.Slice the bell pepper and carrot into thin strips, and cut the onion into half rings.
4.Squeeze out excess moisture from the eggplant and fry in vegetable oil until golden. Place them on a paper towel to absorb any excess oil.
5.Sauté the carrot for 3 minutes. Then add the onion and paprika, and cook for another 5 minutes.Add the tomatoes in their own juice, minced garlic, and all the spices to the pan. Mix well. Then, return the fried beef and eggplant to the pan. Cover with a lid and simmer on low heat for 1–1 hour 20 minutes, stirring occasionally.
Sprinkle the finished dish with chopped walnuts and, if desired, fresh cilantro.
