This fresh salad with cucumber, bell peppers and green apple is primarily interesting for its fragrant dressing.
Ingredients:
- Cucumbers – 250 gr.
- Bell pepper – 100 gr.
- Green apple – 50 gr.
- Green onion – 50 gr.
Dressing
- Basil
- Dill
- Garlic – 1 clove
- Vegetable oil (or olive oil) – 2 tbsp.
- Grainy mustard – 1 tsp.
- Lemon – 0.5 pcs.
- Black ground pepper – to taste
- Salt – to taste
Cooking process
Wash the pepper, remove the seeds and cut into thin rings (or half rings).
Wash cucumbers, peel and cut into long thin strips.
Green onion also cut into strips. It is better to add a young thin onion.
Peel the apple and cut into strips. Do this at the very end so that it does not have time to darken.
Salad dressing: mix basil leaves, garlic, dill, vegetable oil, mustard and lemon juice in a blender. Salt and pepper to taste, mix well. The color of the dressing can be different, depending on whether you added the color of the basil – purple or green.
Mix all chopped ingredients gently. Dress the resulting salad with dressing and decorate with basil leaves. If desired, you can also sprinkle with finely grated lemon zest.
