This shrimp soup with coconut milk is very aromatic, full-bodied and moderately spicy. This recipe is based on the recipe of the famous Thai soup Tom Yam, but with minor changes in the composition and cooking process.
Ingredients (per saucepan 2.5 l.):
- Chicken broth – 2.5 l.
- Shrimp (unpeeled) – 400 gr.
- Red fish – 200 gr.
- Rice – 150 gr.
- Champignons – 200 gr.
- Coconut milk – 400 ml.
- Onions – 1 pc.
- Tomatoes in their own juice – jar (400g.)
- Ginger – 2-3 cm
- Garlic – 1 clove
- Lemongrass – 1-2 pcs.
- Lemon zest – 1 tsp
- Dried chili pepper – 0.5 tsp
- Cilantro – bunch
- Salt
- Lime (or lemon) – for serving
Cooking process
1 Clean the shrimp from the shells.Add shrimp shells to the finished chicken broth and cook for 15 minutes. Filter.
2 While the broth is cooking, prepare all the necessary ingredients for the soup.
Put pieces of ginger and garlic in a pan with heated butter. Fry for 5 minutes and remove them from the pan. During this time, the oil will absorb the aromas of ginger and garlic and they are no longer needed.
3 Put finely chopped onion in a frying pan with butter. Fry it until transparent.
Add mushrooms cut into slices to the onion. Stir and fry for 5 minutes.Add chopped tomatoes in their own juice (or fresh grated). Simmer for a few more minutes.
4 Boil rice until tender. We will serve it separately with the soup.
5 Put onion with mushrooms, peeled shrimps and small pieces of fish into a saucepan with broth. Now add the lemongrass, chili and lemon zest.
Pour in coconut milk. Stir and bring to a boil, cook for a few more minutes. Salt to taste.
At the end of cooking, you need to get the lemongrass pieces. It is not eaten, but added only to add flavor to the soup.
Ready shrimp soup with coconut milk is served with rice, cilantro and lime wedges.
