It seems to me, cilantro – it’s the greens, to which can not be treated with indifference. Cilantro is either loved or not. If you consider yourself to be in the first category of people, then you must love this salad with cilantro and tomatoes. An interesting feature of this salad is the use of grained cottage cheese as a dressing.
Ingredients (for 2 servings):
- Tomatoes – 2 pcs.
- Fresh cilantro – small bunch
- Iceberg lettuce
- Red salad onions – 0.5 pcs. small onion
- Cottage cheese – 6 tbsp
- Lemon juice or wine vinegar – 1 tbsp
- Ground black pepper – a pinch
- Salt to taste
Cooking process
1 Cut the red onion into thin half rings. Pour lemon juice or wine vinegar on the onion. Leave it to marinate for 5 minutes. As a result, the onion acquires a slight sourness and unpleasant bitterness leaves.
2 Wash and chop the cilantro and iceberg lettuce.
Cut the tomatoes into medium-sized pieces.
3 Put all prepared ingredients on a plate and mix gently. Salt and pepper to taste.
Light and fresh salad with cilantro and tomatoes is ready!
Helpful Hint: Don’t discard cilantro stalks. You can freeze them and then add them during the preparation of soups or main courses to give them additional flavor. So, for example, I add cilantro stalks to Spicy Tomato Rice Soup https://takajaeda.com/en/recipes-en/spicy-tomato-soup-with-rice/
