Light and refreshing cucumber soup with dill and mint is a great dish for a hot summer day. This soup contains Greek yogurt, which gives it such a delicate, pleasant consistency.
Ingredients (for 3 servings):
- Cucumbers – 6 pcs. medium size
- Greek yogurt 2% – 250 gr.
- Dill – 6 tbsp. finely chopped
- Garlic – 1-2 cloves
- Mint leaves – 2 tbsp finely chopped
- Lemon juice – 2 tbsp
- Ground zira – 0.5 tsp
- Olive oil (or other vegetable) – 2 tbsp.
- Ground black pepper – a pinch
- Salt to taste
Cooking process
1 Remove the peel from the cucumbers and cut into slices. Put them in a blender bowl.
Grind the dill, mint and garlic. Put them to cucumbers. Pour lemon juice and vegetable oil there. Add Greek yogurt. Pour in ground cumin and salt.
2 Grind and mix all ingredients in a blender until smooth. The amount of garlic and cumin can be adjusted to your liking.
In just 10 minutes, a healthy refreshing soup is ready!
Ready cucumber soup must be chilled before serving. This can be done in the refrigerator or placed in the freezer for 5-7 minutes.
Serve the soup to the table, sprinkle with fresh herbs and black pepper.
