This light and fresh Mediterranean salad is a great start to a delicious lunch or dinner.
Ingredients (for 2 servings):
- Lettuce (or ready-made salad mix) – 100 gr.
- Bell pepper – 1 pc.
- Feta cheese – 100 gr.
- Red onion – 0.5 pcs.
- Black Olives – a handful
- Lemon juice to taste
- Olive oil – 3 tbsp.
- Dried oregano – pinch
- Ground black pepper
Cooking process
Cut the red onion into thin half rings. Pour lemon juice or wine vinegar on the onion. Leave it to marinate for 5 minutes. As a result, the onion acquires a slight sourness and unpleasant bitterness leaves.
Wash lettuce, dry it and tear it with our hands. Or add a ready-made salad mixture.
Cut the bell pepper into strips.
Cut the feta cheese into small cubes.
We take out the seeds from the black olives and cut into 2 parts. I use turkish sun-dried olives. They have a more intense flavor than canned olives.
Put all the prepared ingredients on a plate. Mix gently.
Salad dressing. Mix olive oil with fresh lemon juice and oregano. Pour the salad with the resulting dressing.
Sprinkle the prepared Mediterranean salad with freshly ground black pepper. Feta cheese and olives are quite salty, so you don’t need to add salt to the salad.
You can also add fresh tomatoes and cucumbers to this salad, if you wish.
