The process of making all three types of pesto will be the same. Put greens, nuts, garlic and salt in a blender bowl (or mortar) and grind everything to a homogeneous consistency. Add olive oil, freshly squeezed lemon juice and cheese grated on a fine grater. All is well mixed.
