Khachapuri, it seems to me, is one of the most famous and popular dishes of Georgian cuisine. There are several types of this dish. Earlier I already shared the Adjarian khachapuri recipe https://takajaeda.com/en/recipes-en/adjarian-khachapuri/. Today I want to share a recipe for another type of khachapuri – Imeruli khachapuri. It is a flatbread filled with a mixture of cheeses. Imeruli Khachapuri is baked in the oven or cooked in a dry frying pan.
Ingredients (for 2 psc.):
Dough
- Wheat flour all purpose – 400 grams.
- Dry yeast – 1 tsp
- Water – 300 ml.
- Salt – 1 tsp
- Sugar – 1 tsp
Stuffing
- Suluguni cheese – 300 grams
- Feta cheese – 200-250 grams
- Egg for brushing – 1 psc.
- Butter – 20 grams
Cooking process
1 First of all, prepare the dough.
Pour the flour, yeast, salt and sugar into the bowl. Pour warm water and knead the dough. The dough should turn out not too tight and a little stick to the hands. Form a bowl from the dough and put it in a greased bowl. Cover the bowl with a towel. Leave it in a warm place for 1.5-2 hours.
2 While the dough is proving, we will prepare the filling for future khachapuri. We rub Suluguni cheese on a coarse grater, and Feta cheese can simply be kneaded with a fork. Then we mix them.
3 Put the risen dough on a floured surface and knead it for a couple of minutes. It should become a smooth ball. We divide this ball into two equal parts (each is the basis of our khachapuri).
4 Roll out the dough into a square. Better to do this already on baking paper. Then it will be more convenient to transfer the khachapuri to a baking sheet.
Spread the filling, as shown in the photo below. If desired, you can pepper the filling. Next, turn each corner of the dough in turn to the center. Carefully pinch the edges of the dough to each other. We make a small hole in the center. Glaze the flatbread with a beaten egg on top.
In order for the bottom of the khachapuri to be crispy, the baking tray must first be preheated. And put the khachapuri on a preheated baking sheet.
Bake Imeruli khachapuri in an oven preheated to 180 degrees for 25-30 minutes.
Ready hot khachapuri should be greased with butter. And you can immediately serve it to the table.
