Cooking process
1 Cut the onion into half rings. We put it in a preheated pan with a mixture of butter and vegetable oils. Fry it until golden brown.
Add carrots, cut into large pieces, to the onion. Fry for 5 minutes, stirring occasionally.
2 Next, pour brandy into the pan. Let it evaporate for a few minutes.
Add the remaining ingredients: BBQ sauce, Worcester sauce, chili peppers, black peppercorns, bay leaves and cloves. Fill everything with a glass of water and mix well. Cover the pan with a lid and simmer for 15 minutes.
Worcestershire sauce can be substituted for balsamic vinegar.
I used my own BBQ sauce https://takajaeda.com/en/recipes-en/jack-daniels-bbq-sauce/. But you can replace it with ketchup or tomato paste.
Transfer the resulting sauce to a baking dish.
3 Cut the beef into pieces. Dip each bite in flour. Fry the beef in vegetable oil over high heat until golden brown.
4 Put the fried beef to the sauce in a baking dish. Close with a lid or foil. And we put it in an oven preheated to 180 C(350 F) degrees. We bake for 1 hour 20 minutes.
5 We proceed to the final stage of making mini pies.
Cut the chilled puff pastry into squares. We put them in molds, pre-greased with butter. Put the filling in the resulting baskets. Cover the top with a layer of dough and pinch the edges well. Lubricate each spicy beef mini pie with egg yolk. We also make cross-shaped cuts on the pies in the center.
We bake in an oven preheated to 200 C(390 F) degrees for 20 minutes
Freshly baked mini pie with beef – must be slightly chilled before serving.
Bon Appetit!
