Introducing a new recipe that will surely tantalize your taste buds – Eggplant salad whith Walnut. This aromatic and flavorful salad beautifully combines various textures and flavors, striking the perfect balance between crispy eggplant, savory cheese, and nuts. Ingredients (for 2-3 serving):
- Eggplant – 1 pc.
- Tomato – 2 pcs.
- Feta cheese – 70 g
- Red onion – 1/4 bulb
- Walnuts – a handful (30 g)
- Starch – a handful
- Oyster sauce – 2 tbsp
- Soy sauce – 1 tbsp
- Vegetable oil (I use sesame) – 2 tbsp
- Honey – 1/2 tsp
- Cilantro – 1 tsp
- Granulated garlic – 1/2 tsp
- Ground coriander – 1/2 tsp
- Chili pepper – optional
- Salt
Cooking process
Peel the eggplant and cut it into medium-sized cubes. Place the eggplant pieces in a bowl of cold water.
Sprinkle starch onto a plate and roll each eggplant piece in it, coating all sides.
Heat vegetable oil in a saucepan to the desired temperature and carefully lower the eggplant cubes into it, ensuring they are fully coated with oil. Fry until golden brown. Then transfer the fried eggplant pieces to a plate lined with paper towels to remove excess oil. Season with salt and add ground coriander. Gently mix.
Tomatoes are cut into small wedges. Red onion – into thin half rings. Cut the Feta cheese into cubes.
Salad dressing: mix Oyster sauce, soy sauce and oil with honey, granulated garlic, and a pinch of chili pepper (optional).
Place tomatoes, eggplant, onion, Feta, chopped walnuts on a plate. Sprinkle with dried coriander and drizzle with salad dressing.
