Fritters come in different varieties, including tomato. Why not?! Today, I want to share an interesting recipe originating from Greece. These Greek Tomato Fritters turn out incredibly tender and flavorful.
Ingredients:
- Tomatoes – 3 pieces (large)
- Onion – 1 piece
- Feta cheese – 100 g
- Parsley
- Mint
- Flour – 3 tbsp
- Baking powder – 1 tsp
- Oregano – 1 tsp
- Garlic powder – 1 tsp
- Olive oil
- Ground black pepper
- Salt
Sauce:
- Greek yogurt
- Parsley
- Mint

Cooking process
1 First, you need to peel the tomatoes. To do this, make cross-shaped incisions on each tomato and blanch them with boiling water. After that, you can easily remove the skin.Dice the peeled tomatoes into small cubes. Place them in a sieve and leave for 20 minutes to drain the juice.
2 Dice the onion.
3 Finely chop the herbs.
4 Mix the tomatoes, onion, chopped Feta cheese, oregano, dried garlic, flour, and baking powder. Season with salt and pepper to taste.Put the resulting mixture in the refrigerator for 20 minutes.
5 Fry the fritters over medium heat on both sides until golden brown. It’s convenient to place the mixture on the pan using a spoon, moistened with water.
6 Sauce. Mix yogurt, finely chopped herbs, and pressed garlic. Add a little olive oil, oregano, pepper, and salt. Mix well.
Serve the Greek Tomato Fritters with freshly made sauce.
