Paratha is one of the varieties of Indian bread. They are yeast-free flatbread fried in a pan. There are both with fillings and without them. These indian flatbread are perfect for many dishes. You can serve them with soups, salads or stews. But, by far, the best combination is with classic Indian dishes such as curry, dal, tikka masala, palak paneer and others.
There are many recipes for these flatbreads. I cook them according to the recipe of Jamie Oliver, which, in turn, was shared with him by a chef from India.
ingredients:
- Whole grain flour – 300 gr.
- All-purpose flour – 300 gr.
- Milk – 400 ml.
- Olive oil
- Butter Ghee
- Sea salt – large pinch
Cooking process
From this amount of ingredients, 8 pieces of flatbread are obtained.
1 Mix flour and salt. Gradually add milk and 2 tbsp. tablespoons of olive oil. Mix thoroughly and knead the dough for several minutes.
Let the resulting dough rest for 20 minutes.
2 Divide the dough into 8 pieces.
Roll out each piece into a thin layer. Brush it with either ghee or olive oil. Next, you need to roll the dough into a roll. To do this, first bend the side edges of the dough inward, and then roll a thin roll (photo below). At the same time, we do not press hard, it should not be dense. Twist the resulting roll as shown in photo 3. Then roll out with a rolling pin to a thickness of 0.5 cm.
3 Fry the flatbread in a hot frying pan greased with ghee. Approximate cooking time is 3 minutes on each side.
Ready-made fresh Indian flatbread Paratha are crispy on the outside and with pronounced layers inside.
