Beef tongue is not the most popular salad ingredient. But I like salads with his participation. This hearty tongue salad with potatoes and pickles can be safely served as a main dish.
Ingredients (for 3-4 servings):
- Beef tongue – 400-500 gr.
- Potatoes – 2 pcs.
- Pickled cucumbers – 2 pcs.
- Onion – 2 pcs. small size
- Dill – bunch
- mayonnaise (or mayonnaise and greek yogurt mix)
- French mustard
- Ground black pepper
Cooking process
Beef tongue must be boiled. Put tongue in boiling water and cook for 2-2.5 hours until soft. During cooking, bay leaves and black peppercorns can be added to the pot. The finished tongue is cooled and cleaned. Cut into strips.
Onion cut into half rings. Fry for a few minutes in a hot pan with vegetable oil. Then reduce the heat to a minimum and simmer under the lid for another 15 minutes.
Boil potatoes in their skins. Cool, peel and cut into cubes.
Cut pickled cucumbers into strips.
Wash dill, dry and finely chop.
Gently mix all prepared ingredients.
Dress the salad with mayonnaise and French mustard. For a lighter version, mayonnaise can be diluted with Greek yogurt.
Like any salad with mayonnaise dressing, this tongue salad should also be put in the refrigerator for a couple of hours. So he will be better saturated.
Sprinkle the finished salad with freshly ground black pepper. Decorate with any herb you like.
