These turkey patties with zucchini and oat flakes will definitely win you over – they are incredibly tender and juicy!

Ingredients:
- Ground turkey — 1 lb (450–500 g)
- Zucchini — 1½ cups grated (about 7 oz / 200 g)
- Carrot — 1 medium, grated
- Yellow onion — 1 small, finely diced
- Old-fashioned rolled oats — 3 Tbsp
- Egg — 1 large
- Garlic powder — 1 tsp
- Dried parsley — 1 tsp
- (or 1 Tbsp fresh, finely chopped)
- Salt — ¾ tsp, or to taste
- Black pepper — ½ tsp
- All-purpose flour — for dredging
- Vegetable oil — for frying
Cooking process
Sauté the vegetables
Heat 1–2 tablespoons of vegetable oil in a skillet over medium heat.
Add the diced onion and grated carrot. Cook for 3–4 minutes, stirring, until softened. Remove from heat and let cool slightly.
Prepare the mixture
In a large bowl, combine the ground turkey, grated zucchini (lightly squeeze out excess moisture), oats, egg, garlic powder, parsley, salt, and pepper.
Add the cooled onion and carrot mixture. Mix thoroughly—best done by hand—until well combined.
Let the mixture rest for 15–20 minutes so the oats can absorb moisture.
Shape and fry the patties
Form small patties and lightly coat each one in flour.
Heat vegetable oil in a skillet over medium heat and fry the patties for about 5 minutes per side, until golden brown.

Simmer until tender
Add 2–3 tablespoons of water to the pan, cover with a lid, reduce heat to low, and simmer for 10 minutes.
This step ensures the patties are fully cooked and extra juicy.
To Serve
Serve the turkey patties hot with:
- Mashed potatoes or rice
- Fresh salad or steamed vegetables
- Yogurt or sour cream–based sauce
