As I wrote earlier, there are many options for making famous British buns – scones. Today I want to share another recipe of this baking. Orange scones with cinnamon are very spicy, aromatic, soft and fluffy. They are lighter and more fluffy than scones made from wheat and whole grain flour (recipe link https://takajaeda.com/en/recipes-en/scones/).
Ingredients:
- Wheat flour – 300 gr.
- Cream 10% – 160 ml.
- Sugar – 80 gr.
- Butter – 70 gr.
- Chicken eggs – 1 pc.
- Baking powder – 12 gr.
- Orange zest – from two orange pcs.
- Orange juice – 30 ml.
- Cinnamon – 1 tsp
- Salt – a pinch
Cooking process
1 Sift the flour into a bowl. Add baking powder, salt to the flour and mix. We also send softened butter there. And we move on to rubbing butter into flour. We do this until the whole mixture turns into small crumbs.
Add sugar, cinnamon and grated orange zest to the resulting mass. Mix everything well.
All that remains is to add cream, freshly squeezed orange juice and knead the dough.
2 Put the resulting dough on a floured surface. Roll out the dough into a layer. We fold the resulting layer in half and level it a little. Next, fold the dough again and level it slightly again. And fold it in half for the last time. Thus, we made the initial layer multi-layered.
We remove the finished dough in a cool place for 15 minutes.
3 After the right time has passed, we proceed to forming the buns. To do this, roll out the dough into a layer 2-3 cm thick. Cut out circles from the dough with a mold. Also, the scones can be made square or in the form of a triangle.
Put the resulting buns on a baking sheet covered with parchment paper. Brush them with an egg. We put the baking sheet in a preheated oven to 200 degrees. We bake the scones for 20 minutes. However, they should be well browned.
Put the finished orange scones with cinnamon on the wire rack and cool. It is best to eat them on the first day. Alternatively, store in a tightly sealed container. This will keep them soft.
The scones can be served cut in half, with whipped cream, ricotta, cream cheese and / or jam.
