Looking for a cozy breakfast or brunch with a touch of elegance? These hot sandwiches with Brie cheese and cranberry sauce offer the perfect balance of creamy, sweet, and savory flavors. Soft Brie melts beautifully over crispy toast, while tangy cranberry sauce adds a bright, festive note.

Ingredients (for 4 sandwiches):
For the sandwiches:
- 150 g (5 oz) Brie or Camembert cheese
- 4 slices of baguette, white bread, brioche, or Texas toast
- 2 eggs
- 50 ml (3½ Tbsp) milk or half-and-half
- 20 g (1½ Tbsp) butter
- Salt & pepper, to taste
- Optional: fresh herbs (sage, rosemary, or thyme) for extra aroma
For the cranberry sauce (if not using store-bought):
- 100 g (3.5 oz) fresh cranberries
- 50 g (¼ cup) gelling sugar, or sugar + 1 tsp lemon juice
- Optional: a pinch of cinnamon or a little orange zest for holiday vibes
Instructions
1️⃣ Make the cranberry sauce (optional)
- Crush the cranberries slightly and combine them with sugar in a small saucepan.
- Simmer over low heat for 15–20 minutes, stirring occasionally, until thickened. Let cool before using.
Tip: Make extra! This sauce is fantastic with roast turkey, meatballs, pâté, baked beef, or even pancakes and oatmeal.

Sandwich Assembly:
2️⃣ Prepare the egg mixture
Beat the eggs with milk, salt, and pepper in a shallow bowl.

3️⃣ Cook the sandwiches
Cover the pan with a lid for 1–2 minutes, allowing the cheese to melt perfectly.
Melt butter in a frying pan over medium heat. Add fresh herbs if using.
Dip each slice of bread into the egg mixture, just like French toast.
Fry one side until golden. Flip the bread and immediately place slices of Brie on top.

4️⃣ Serve
- Spread or spoon cranberry sauce over the melted Brie.
- For extra indulgence, drizzle with honey or maple syrup and sprinkle toasted nuts on top.
Result: Melty Brie + sweet-tart cranberry + buttery toast = pure comfort food bliss.
