How to make vegetable salad more nutritious and interesting? One great option is to add grilled halloumi (or tofu for the vegetarian option). Halloumi cheese is easy to grill, does not spread and holds its shape perfectly. At the same time, it becomes very tender inside.
Ingredients (for 2-3 servings):
- Tomatoes – 2 pcs. medium size
- Bell pepper – 0.5-1 pcs.
- Cucumber – 2 pcs.
- Red onion (or sweet white) – 0.5 pcs.
- Olives (or black olives)
- Halloumi cheese (or tofu cheese) – 150 gr.
- Lemon juice – 1 tbsp
- Olive oil – 2-3 tbsp
- Oregano – a pinch
- Ground black pepper
- Salt
Cooking process
Halumi cheese (or tofu cheese) is cut into 1 cm thick pieces.Fry on the grill for 2-3 minutes, or in a grill pan for 2 minutes on each side until a light golden crust is formed. The pan can be pre-greased with oil.
Let the cheese cool.
2 Cut the red onion into thin half rings. Pour lemon juice or wine vinegar on the onion. Leave it to marinate for 5 minutes. As a result, the onion acquires a slight sourness and unpleasant bitterness leaves.
3 Wash peppers, tomatoes and cucumbers and cut into medium-sized pieces.
4 Prepare the salad dressing. Mix olive oil with lemon juice and dried oregano – mix everything well.
5 Put all prepared vegetables and olives (or black olives) on a plate. Salt to taste. Pour the dressing and put the cheese on top. Sprinkle the prepared salad with freshly ground black pepper.
