Gong bao chicken is a famous Chinese dish. It is pieces of spicy chicken fried with peanuts. Chili peppers are also an essential part of this dish. This dish is cooked in a hot wok.
It may not be the most authentic recipe for this dish. And I cook not in a wok, but in a simple frying pan. But it also turns out very tasty and spicy.
Ingredients (for 3 servings):
- Chicken thighs – 4 pcs.
- Chicken broth – 100-150 ml.
- Bell pepper – 1 pc.
- Garlic – 1 clove
- Peanuts – 80 gr.
- Peanut butter – 1 tbsp.
- Ginger root – 1 cm.
- Soy sauce – 2 tbsp.
- Rice culinary Shaoxing wine (can be replaced with rice vinegar) – 2 tbsp.
- Chili pepper – to taste
- Vegetable oil
- Sesame seeds – for serving
Cooking process
I prefer to cook this dish not from chicken fillet, but from dark chicken meat. In this case, as it seems, the dish turns out to be more juicy.
1 Remove the skin from the chicken thighs. Next, separate the meat from the bones. Cut it into small pieces. Marinate the meat in a mixture of soy sauce and Shaoxing rice wine. The latter can be replaced with rice vinegar. We also add chili pepper flakes and garlic squeezed through a press. The amount of chili pepper can be varied according to your own taste. Let the chicken marinate in the fridge for an hour.
2 Cut the ginger into small pieces. Fry it for a minute in vegetable oil in a hot frying pan. Add a small piece of chili pepper to the ginger. Fry for another minute. Throw in the chopped bell peppers. Fry for a few more minutes.
Transfer the ginger and pepper to a plate.
3 Fry the chicken in a hot frying pan until golden brown on all sides. For the first couple of minutes, do not touch the meat and do not turn it over. The pan should not be completely filled with chicken. Otherwise, it will simply be stewed, and not fried. If you want to cook more meat, then fry in separate portions.
Temporarily remove the fried chicken from the pan.
4 Roast the peanuts in the same pan for a few minutes. Keep stirring it constantly.
Add chicken broth to peanuts. Simmer for 15 minutes. To get a more creamy sauce, I add another spoonful of peanut butter. Mix. Bring to a boil.
5 In the resulting peanut sauce, add chicken and ginger with paprika. Mix well. Fry for 2-3 minutes.
If desired, the finished dish can be sprinkled with sesame seeds. Gong bao chicken goes well with plain boiled rice.
