This beet salad with feta cheese and walnuts is interesting primarily for its harmonious combination of sweet and salty in one dish. Feta cheese just perfectly complements the sweetish beets.
In general, all the ingredients in the salad go well with each other. Walnuts add their aromatic flavor to the salad. And spinach brings freshness. And all this with an original dressing of olive oil, balsamic vinegar, honey and baked garlic.
Ingredients (for 2-3 servings):
- Beets – 2 pcs. medium size
- Fresh spinach – 150 gr.
- Feta cheese – 50 gr.
- Walnuts – a handful
- Garlic – 2-3 cloves
- Olive oil – 3 tbsp.
- Balsamic vinegar – 1 tbsp.
- Honey – 1 tsp
- Ground black pepper
Cooking process
1 Wrap the beets and garlic cloves in foil. Put them to bake in an oven preheated to 200 C (400 F) degrees. Roasting time for small beets is about 45 minutes. You can get the garlic a little earlier.
After baking, take out the beets and garlic from the foil and let cool.
2 Chop the walnuts and fry in a dry frying pan. They should brown slightly and give off a pleasant, distinct nutty smell.
3 Spinach can be pre-blanched or fresh leaves can be added to salad. And so and so it will be delicious.
4 Cut the beets into strips. Cut the feta cheese into cubes.
Put all the ingredients on a plate.
5 Let’s prepare a dressing for our salad. Mix olive oil with balsamic vinegar. Add honey and baked garlic there. Mix everything thoroughly again.
Pour the salad with the resulting dressing. Mix gently. Sprinkle with freshly ground black pepper on top. Salad can not salt as feta cheese salty enough.
