German sausages Bratwurst are tender and, thanks to the variety of spices, are very aromatic. And a lot of spices are added to them. Most often these are marjoram, nutmeg, pepper and cumin. In sausages according to this recipe, marjoram predominates in taste.
Ingredients (for 1 kg of meat):
- Pork (neck) – 700 gr.
- Beef (or veal) – 300 gr.
- Milk – 100 ml.
- Egg yolk – 1 pc.
- Garlic – 1 clove
- Dried marjoram – 1 tbsp
- Ground black pepper – 0.5 tsp
- Ground white pepper – 0.5 tsp
- Mustard seeds ground – 0.5 tsp
- Nutmeg – 0.5 tsp
- Salt – 1.5 tsp
- Medium pork casings
Cooking process
1 The first thing you need to wash the pork casings and soak it in warm water for 20 minutes.
2 Next, prepare the mince. It consists of two types of meat, spices, milk and egg yolk. When choosing pork, it is better to give preference to pork neck, it has the most optimal combination of fat and meat for this dish.
Put all the ingredients in the bowl of the food processor and grind them until smooth. If you are cooking with a meat grinder, then scroll the meat twice, then add all the other ingredients to the meat and mix thoroughly.
Put the mince in the refrigerator for 1 hour. After this time, you can move on to stuffing the casings and shaping the sausages. I do this through a meat grinder using special attachments for making sausages. It’s fast and convenient. Every 15 cm tie the pork’s casings.
3 Ready sausages must be boiled before frying.
In a large saucepan, bring the water to a boil, reduce the gas to a minimum, and put the sausages in the water. Cook for 20 minutes. At the same time, the water should not boil!
If you have cooked sausages for future use, you can freeze them. It is very convenient to store sausages in the freezer in a vacuum package.
4 Boiled sausages should be fried before use until golden brown. This can be done in a pan, oven, or on the grill.
German sausages can be served with mustard, horseradish and any side dish of your choice. But they go especially well with potatoes.
