Summer is ahead – the season of salads from fresh vegetables and herbs. Light, aromatic, fresh dressing will add bright notes to even the simplest salad. A salad dressing is able to combine all the ingredients into a coherent whole.
Today I want to share two recipes for delicious aromatic dressings based on olive oil. The cooking process is very simple and quick.
Ingredients for 1 dressing:
- Extra virgin olive oil (or grape seed oil) – 80-100 ml.
- Whole grain mustard – 3 tbsp.
- Honey – 1 tsp
- Lemon juice – 3 tbsp
- Dill – 1 bunch (15-20 gr.)
- Garlic – 2 cloves
- Black pepper – to taste
- Salt
Put peeled garlic cloves, dill, honey and lemon juice into the blender bowl – chop. Add olive oil, whole grain mustard to the resulting mixture and mix everything well. It remains only to salt and pepper the dressing to taste.
Ingredients for 2 dressing:
- Extra virgin olive oil (or grape seed oil) – 80 ml.
- Basil leaves – 20 gr.
- Lemon juice – 3 tbsp.
- Lemon zest – 0.5 tsp
- Honey – 1 tbsp.
- Garlic – 1 clove
- Salt
The preparation process for this dressing is even easier. You just need to mix all the ingredients in a blender.
These dressings can be used not only in combination with salads. I add them to spaghetti, bulgur or couscous. Stir or shake the dressing again before serving, so that all the ingredients are evenly distributed. And only after that you can season a salad or other dish.
Dressings can be stored in a glass bottle or jar in the refrigerator for several days.
