Solyanka soup with tongue

Solyanka soup is one of my favorite soups for me. A lot has already been written about it on the Internet, so I will not go into the history of the origin of this dish. I just want to share with you the recipe for my ideal Solyanka. First of all, I will note that I do not try to add as many varieties of meat products as possible. It seems to me that 3-4 high-quality meat ingredients are enough.

Ingredients (for a 3L pot):

Bouillon

  • Beef bone soup set – 700 gr.
  • Water
  • Carrots – 1 pc
  • Onions – 1 pc.

Remaining ingredients

  • Boiled beef – 200 gr.
  • Pork tongue – 300 gr.
  • Cooked-smoked sausage – 150 gr.
  • Tomatoes in their own juice without skin – 1 can (400 ml.)
  • Onions – 2 pcs.
  • Pickled cucumbers – 120 gr.
  • Olives / pits – 80 gr.
  • Olive pickle – 70 ml.
  • Capers – 2 tbsp. spoons
  • Marinated jalapeno – 1 pepper
  • Butter – 30 gr.
  • Salted lemons – a quarter of a lemon (optional and available)
  • Bay leaf – 2 pcs.
  • Allspice peas – 4 pcs.
  • Sour cream, lemon, herbs – for serving

Cooking process

1 The first step is to prepare the broth. I pay special attention to him. In my experience, a strong transparent broth is the key to a delicious Solyanka.

We put our soup set in a saucepan and fill it with water. We put the pan on the fire, bring to a boil and cook for several minutes. Now you need to drain the water. Pour water again and cook for 1.5-2 hours, remembering to remove the foam. After an hour, add the peeled onions and carrots and allspice peas to the pan.

2 At this time, boil the beef and tongue in another saucepan. You need to cook them for 1.5 hours.

3 Next, cut the onion into half rings, the cucumbers into strips, the jalapeno peppers into rings, and cut the olives into two parts.

4 Proceed to preparing the dressing. To do this, heat the butter in a frying pan. Then we send the onion there and fry it until soft (approximately 15-20 minutes). At the same time, we make sure that it does not burn.

5 Add cucumbers to the onion and simmer for 5 minutes. Then we send the tomatoes, grated through a sieve, together with juice into the pan. Simmer all together under the lid for 10 minutes.

6 Cut the boiled beef, tongue and sausage into strips.

7 When the broth is cooked, remove the bones, onion and carrots from it.

Pass to the final stage of “assembling” my ideal Solyanka. We send chopped meat ingredients, dressing and olive pickle to the pan. Bring to a boil and add bay leaf there. Cook for another 10 minutes. After this time, put in the pan all the remaining ingredients: capers and jalapenos. At the same stage, add finely chopped salted lemon, if available. Cook for a few more minutes.

8 Turn off the gas. We try for salt, if necessary, add. Do not forget to get the bay leaf.

Solyanka soup with tongue is ready!

Before serving, let the soup brew for 15-20 minutes. And only after this time you can enjoy a delicious very meaty Solyanka.

Serve Solyanka soup with sour cream, lemon slices and finely chopped herbs. My presentation can be seen in the photo.
