These soft, fragrant cheese buns are perfect for breakfast, snacking, or taking on a picnic. The combination of tender, airy dough and melted cheese is simply irresistible. You can make them plain with cheese or add bacon or sausage for an extra savory twist!

Ingredients:
- 3¼ cups (400 g) all-purpose flour
- 1¼ cups (300 ml) warm milk (about 100°F / 38°C)
- 1½ cups (150–200 g) grated cheese (cheddar, mozzarella, or a mix)
- 3½ oz (100 g) bacon or cooked sausage (optional)
- 1 tsp dry yeast
- 1 tsp sugar
- 1 tsp salt
- 1 tsp dried oregano (optional)
- 1 large egg, beaten (for brushing)
- 1 Tbsp white sesame seeds (for topping)
- 1 Tbsp black sesame seeds (for topping)
- 1 Tbsp vegetable oil (for greasing the bowl)
Instructions
1. Prepare the Dough
Sift the flour into a large bowl. Add the yeast, sugar, and salt, then mix well.
Pour in the warm milk and knead until a soft, slightly sticky dough forms. Shape it into a smooth ball.
Lightly oil the bowl with vegetable oil, place the dough inside, and cover it with a clean towel.
Let it rise in a warm place for about 1½ hours, or until it doubles in size.
💡 Tip: If your kitchen is cool, place the bowl near a warm stove or inside an oven with the light on.
2. Prepare the Filling
While the dough is rising, prepare the filling.
Grate the cheese on a coarse grater. If using bacon, cut it into small pieces and fry lightly until just crisp. Let cool slightly.
You can use a single type of cheese or mix several varieties for more flavor. If you like, sprinkle in a bit of dried oregano for aroma.
3. Roll Out the Dough
Once the dough has risen, punch it down gently and knead for 1–2 minutes until smooth.
Roll the dough out into a large rectangle about ⅛ inch (3 mm) thick on a lightly floured surface.


4. Add the Filling and Shape
Spread the cheese (and bacon, if using) evenly over the dough. Sprinkle oregano if desired.
Roll the dough up tightly into a log, starting from the long side.
Slice the roll into 10–12 equal pieces.
To form buns, pinch one end of each piece closed, leaving the other side open so the cheese is slightly visible.





5. Bake the Buns
Place the shaped buns on a baking sheet lined with parchment paper or a silicone mat.
Brush the tops with beaten egg and sprinkle with white and black sesame seeds.
Bake in a preheated oven at 360°F (180°C) for 20–25 minutes, until golden brown and fragrant.

6. Serve
Let the buns cool slightly before serving. They’re soft inside, lightly crisp on the outside, and wonderfully cheesy.
