This grape and chicken salad is a true flavor bomb! The combination of sweet grapes, tender chicken breast, crunchy walnuts, and creamy Brie cheese makes it perfect for a family dinner or a festive table. The recipe is easy and takes just 25 minutes to prepare.
Ingredients (Serves 4)
For the salad:
- Chicken breast — 2 fillets (about 1.3 lb / 600 g)
- Grapes — 1 cup (seedless recommended)
- Walnuts — 1 cup, roughly chopped
- Brie cheese — 3.5 oz (100 g)
- Salad greens (arugula or mixed greens) — 3–4 cups
- Olive oil — 1 tbsp
- Salt — ¼ tsp
- Black pepper — ¼ tsp
- Sweet paprika — ⅓ tsp
- Dried oregano — ⅓ tsp
For the dressing:
- Olive oil — ¼ cup
- Fresh lemon juice — 3 tbsp
- Honey mustard — 1 tsp
- Freshly ground black pepper — a pinch
Instructions
1. Cook the chicken
Trim the chicken breasts and cut them into ¾-inch (2 cm) cubes. Season with salt, pepper, oregano, and sweet paprika.
Heat 1 tablespoon olive oil in a skillet over medium heat and sauté the chicken for about 8 minutes, turning occasionally, until golden and cooked through. Set aside to cool.
Tip: You can substitute chicken with turkey, and oregano with Italian seasoning.
2. Make the dressing
In a small bowl, whisk together olive oil, lemon juice, honey mustard, and black pepper until well combined.
3. Assemble the salad
Tear the salad greens into bite-sized pieces and place them in a large bowl. Add sliced Brie, grapes, and walnuts. Top with the cooled chicken, drizzle with dressing, and gently toss. Serve immediately.
