This vegetable salad with pickled mushrooms can be classified as a quick and tasty recipe. This is a bright and juicy salad, an interesting zest to which pickled mushrooms give.
Ingredients (for 2-3 servings):
- Pickled mushrooms – 100 gr.
- Bell pepper – 1 pc.
- Fresh cucumber – 1 pc.
- Carrots – 0.5 pcs.
- Red onion – 0.5 pcs.
- Dill – bunch
- Lemon juice
- Unrefined oil (or olive oil)
- Ground black pepper
- Salt
Cooking process
Cut the red onion into thin half rings. Drizzle with lemon juice or wine vinegar. Let it marinate for 5 minutes. As a result, the onion acquires a slight sourness and unpleasant bitterness disappears.
Cut the bell pepper into strips. Take peppers of different colors, so the salad will be even more colorful.
First, boil the carrots until half cooked. Then cool, peel and cut into narrow stick.
Cucumber cut into small stick.
Pickled mushrooms cut into small pieces.Wash dill and pat dry with paper towels. Finely chop.
Mix all prepared ingredients. Dressing salad with unrefined sunflower oil. This oil adds extra flavor and flavor to our salad. But, if you do not like this oil, you can fill it with any other vegetable oil.
