Roasted peppers

Roasted peppers are a delicious, flavorful appetizers that’s easy enough to prepare.

Ingredients:

  • Bell pepper – 1.8-2 kg. (1 kg already baked and peeled peppers)
  • Garlic – 3 cloves
  • Vegetable oil
  • Vinegar – 2 tbsp
  • Sugar – 1 tsp
  • Black peppercorns – 5 pcs.
  • Salt – 15 gr.
  • Smoked paprika – 1 tsp
  • Glass jars

Cooking process

1 Put the peppers on a baking sheet lined with foil. Bake them in an oven preheated to 200 C (395 F) degrees for 40 minutes.

Transfer the baked peppers into a deep dish and cover it with a lid or cling film. Leave them to stand for 15 minutes. We do this in order to make it easier to remove the skin from them.

2 Peel the peppers from the skins and seeds, after draining their own juice into a bowl, which was released during baking. Cut them into long strips.

3 Peel and chop the garlic. We put it in a preheated pan with vegetable oil. Fry for a few minutes on small gas.

4 Add chopped peppers and pepper juice to the garlic. Stir and simmer for 5 minutes.

Add salt, sugar, peppercorns and smoked paprika to the pan. Stir, bring to a boil and turn off the gas. At the end, add vinegar and mix well again.

Roasted peppers

If you cook the peppers on one go, or will only store them for a few days, then you don’t need to add vinegar.

5 Put the peppers in pre-sterilized jars. Tightly tighten the lids and leave upside down at room temperature until morning.
