Egg muffins

Egg muffins baked in the oven are a great option for a hearty, varied and, of course, delicious breakfast. In this recipe, I suggest making egg muffins with three types of fillings:

  • Four cheeses “(cheeses Suluguni, Brie, Dor Blue and Parmesan).
  • “Champignons with onions and herbs” (champignons, onions, Salami sausage, Suluguni cheese, herbs).
  • “Brie Cheese with Salami”

Ingredients:

  • Chicken eggs – 5 pcs.
  • Cream 10% (or milk) – 70 ml.
  • Champignons – 100 gr.
  • Onions – 1 pc.
  • Suluguni cheese – 50 gr.
  • Brie cheese – 50 gr.
  • Dor Blue cheese – 50 gr.
  • Parmesan (or other aged cheese) – 20 gr.
  • Salami sausage – 50 gr.
  • Greens (dill, parsley, green onions) – any other to taste
  • Microgreens cress – to taste
  • Butter – 20 gr.
  • Vegetable oil – 1 tbsp.
  • Ground black pepper – to taste
  • Salt

Cooking process

1 The first step is to prepare the filling for our egg muffins.

Wash the champignons thoroughly and cut them into slices. Cut the peeled onion into small cubes.

Put the onion in a preheated pan with a mixture of butter and vegetable oil. Fry it until light golden brown. Next, add mushrooms to the onion. Fry them together until golden brown. At the end, pepper and salt to taste.

2 Let’s move on to preparing the rest of the filling ingredients. Cut the sausage, Brie and Dor Blue cheeses into small pieces. Three Suluguni cheese on a coarse grater, and parmesan on a fine grater. Greens just finely chop.

3 Mix eggs with cream and a pinch of salt. It is not necessary to whisk the eggs well. Stir thoroughly with a whisk. You should get a homogeneous mass.

4 Distribute the prepared filling into the molds. From this amount of ingredients, 6-8 muffins are obtained.

I used silicone molds, they do not require additional oiling before baking. But, if you have metal molds, then it is better to grease them first with oil, and then just lay out the filling.

Pour the egg mixture into each mold.We bake in an oven preheated to 190 C ( 375 F) degrees for 17-20 minutes.

Serve warm egg muffins sprinkled with finely chopped herbs or microgreens. They come out light and porous, with a delicate texture. Such portioned baked omelets are good not only for breakfast, but also suitable as a light meal or snack.
