Scrambled eggs Classic

Scrambled eggs is one of our family’s favorite breakfast options. This delicate, airy dish can be prepared with just two ingredients – eggs and butter. The classic scramble is a basic, versatile dish. It goes well with many foods. Personally, I like the following combinations: with avocado and arugula, with sun-dried tomatoes and pesto sauce, with bacon and fried onions and just with slices of lightly salted salmon. As you can see, there are a lot of filing options. The main thing is to observe the cooking technology so that the scramble of the correct consistency is obtained – tender and slightly moist.

Ingredients (for 2 servings):

  • Eggs – 5 pieces
  • Butter – 40 g.
  • Dill (or other greens of your choice)
  • Black pepper
  • Salt in

Cooking process

1 First of all, break the eggs into a bowl and mix them thoroughly with a fork. It is necessary to stir, not to whip.

2 Put butter (preferably high-quality butter with 82% fat content) in a frying pan and melt it over low heat. At the same time, make sure that it does not boil.

3 Now carefully pour the eggs into the pan. You need to cook over low heat. To get the right scramble – airy and slightly damp, it is important to constantly stir the egg mass. This should be done from the edges to the center. We constantly shift the slightly grasped mass towards the center with a spatula. We do this in a few minutes. At the same time, it is important to ensure that it does not dry out and, moreover, does not burn. The main thing is to have time to remove the pan from the heat until the scramble is completely ready. After that, let it cook for 1-2 minutes in a still warm frying pan.

At the end of cooking sprinkle with scrambled freshly ground black pepper. I pray the peppers directly to the dish using a hand-made miller. So the pepper does not lose its flavor. Now you need to salt the dish (by the amount of salt orientate to your taste).

Put the ready scramble on a plate and sprinkle with finely chopped greens. It can be dill, green onion or arugum. In principle, any greens to your liking. It also tastes good if sprinkled on top with any grated cheese.

You can also serve scrambled eggs on freshly roasted toast. This option is more nutritious.
