Ingredients:
- Water (or vegetable broth) – 2 liters.
- Peeled celery root – 600 gr.
- Peeled carrots – 300 gr.
- Red lentils – 100 gr.

- Butter – 40 gr.
- Sherry vinegar – 2 tbsp spoons (or dry Sherry or any dry white wine 150 ml.)
- Fresh herbs to taste
- Ciabatta – for croutons (optional)
- Garlic – 1 crouton clove
- Olive oil – 1 tbsp. croutons spoon
- Ground black pepper
- Salt
Cooking process
1 Melt the butter in a frying pan. Put the chopped onion in a preheated pan. Fry the onions over medium heat for several minutes. Then reduce the heat and simmer the onion under a cover for 10 minutes.
2 While the onion is stewing, cut the pre-peeled celery root and carrots into cubes.
Add celery and carrots to the pan. Mix everything well. Now you need to add the Sherry vinegar. Let the vinegar evaporate for a few minutes. Next, pour a little broth (or water) into the pan and simmer for 15 minutes.
3 Next, put the contents from our frying pan into a saucepan with broth (or boiling water). Add the pre-washed red lentils there. Bring to a boil. Cook the soup covered over low heat for 20 minutes. Salt and pepper the soup 5 minutes before the end of cooking.
4 I usually serve homemade croutons with the puree soup. It is very easy to make them. We cut bread cubes 1 * 1 cm in size. I cooked from Ciabatta, from which the croutons are lighter and more airy. Fry the bread in a dry frying pan until golden brown. Pour the finished croutons with olive oil and sprinkle with finely chopped garlic. These croutons give a special flavor to the puree soup.
5 Turn the finished soup into a puree soup using a blender. It turns out to be delicate and very aromatic. Carrots and lentils give the soup a rich, beautiful color.
