Scones with feta, pancetta and olives

Scones with feta, pancetta and olives are good as an independent dish for breakfast or a picnic, or as an addition to soups. These are fluffy buns with a pleasant creamy taste. Feta cheese and olives give them a light salty flavor, while pancetta makes the buns juicier and more savory.

Ingredients:

  • Wheat flour – 300 gr.
  • Cream 10% – 160 ml.
  • Butter – 70 gr.
  • Feta cheese – 200 gr.
  • Pancetta (or bacon) – 50 gr.
  • Chicken eggs – 1 pc.
  • Baking powder – 12 gr.
  • Olives – 100 gr.
  • Nigella seeds (or black pepper) – 0.5 tsp optional
  • Salt – a pinch

Cooking process

1 Sift the flour into a bowl. Add baking powder, salt to the flour and mix. We also send softened butter there. And we move on to rubbing butter into flour. We do this until the whole mixture turns into small crumbs.

Add chopped feta cheese, pancetta, olives and nigella seeds. Mix everything well. Nigella (black cumin) gives scones a light spicy oriental flavor. If you don’t have such a spice, add black pepper.

All that remains is to add cream and knead the dough.

2 Put the resulting dough on a floured surface. Roll out the dough into a layer. We fold the resulting layer in half and level it a little. Next, fold the dough again and level it slightly again. And fold it in half for the last time. Thus, we made the initial layer multi-layered.

Remove the finished dough in a cool place for 15 minutes.

3 After the right time has passed, we proceed to forming the buns. To do this, roll out the dough into a layer 2-3 cm thick. Cut it into squares 5 * 5 cm in size. You can also make scones and round.

Put the resulting buns on a baking sheet covered with parchment paper. Lubricate them with an egg. We put the baking sheet in a preheated oven to 200 C (392F) degrees. We bake the scones for 20 minutes. At the same time, they should rise well and brown.
